There’s always always some kind of work to do (that’s the nature of life!), and I’m often so consumed by it that I don’t take time for life’s little pleasures. Like taking 30 minutes in the evening to write in my journal. Or making a new recipe just to enjoy with my family instead of obsessing that it’s been tested/retested/written up/photographed/etc. (An occupational hazard, I’m afraid.) And enjoying winter for one of my favorite things about it: the fact that a snow-dusted landscape is just so pretty to look at. The other day we got an inch of snow and my niece had a snow day (which is admittedly a little strange! As a native Buffalonian, the DC area’s interpretation of a “snow storm” is a bit different than what I’m used to). It was unexpected, but instead of looking at it as an inconvenience, I took it as an unexpected blessing. Life is too short not to take the opportunity to spend time just enjoying our loved ones. Thinking of my own snow day memories as a child, I told her that no snow day is complete without hot chocolate. This version is thick and luxurious, almost like drinkable chocolate custard, and reminds me of Parisian-style hot chocolate. But this version is also rich with protein from cashews and an egg yolk, and is the perfect fuel for a kid or a kid-at-heart spending an afternoon playing in the snow. Protein-Packed Thick and Creamy Hot Chocolate PRINT RECIPE PIN RECIPE Thick, rich Parisian-style hot chocolate that packs a nice boost of protein.     Ingredients 4 tablespoons whole raw cashews ½ cup (120 ml) canned unsweetened, full-fat coconut milk 2 tablespoons unsweetened cocoa powder 2 tablespoon pure maple syrup ¾ teaspoon pure vanilla extract ⅛ teaspoon fine sea salt 1 large egg yolk         Instructions Rinse the cashews in a colander under cold running water. Place them in a bowl and add enough water to cover them by 2 to 3 inches. Cover the bowl and let the nuts soak for 8 hours (or overnight); drain. Add the soaked cashews and all other ingredients to a blender or food processor and process until smooth and creamy, scraping down the sides of the bowl as necessary. (Please note that you’ll get the best results using a high-speed blender.) Pour the mixture into a small saucepan over low heat and cook until steaming hot, stirring constantly. (But I confess, I love iced coffee so much I happily shiver my way through it in February.) There’s nothing I enjoy more on warm day when I’m out and about running errands than making a pit stop first thing at a coffee shop for a cold drink of some kind. Why not just eliminate the need for an extra stop and make something healthier at home?   My 5-Ingredient Skinny Mocha Frappuccino is my answer for those times when I want something refreshing, but just a little different from my regular iced coffee. Notes of chocolate and vanilla pull out the natural complexity of flavor in coffee, and full-fat coconut milk adds a touch of richness along with healthy fat. If coconut milk isn’t your thing though, feel free to swap it out for half and half or whatever you take in your coffee. (And I admit, I didn’t count the ice in the 5 ingredients. I think water and ice are freebies, lol.) Cocoa vs Cacao How is Cocoa Different From Cacao? Cacao refers to the food items derived from the cacao bean that have remained raw. These products include cacao nibs, cacao butter, cacao mass or paste, and most frequently, cacao powder. Raw cacao powder is made by cold-pressing unroasted cocoa beans, which retains the living enzymes and removes the cacao butter. Now, let me preface this by saying that I am a firm believer that there is a time and a place for a PSL, namely, nearly every day from October through November, and in my belly. But like the saying goes, variety is the spice of life. That’s where this fun little number comes in! I imagine it to taste a little bit like less sickly butterscotch.” So then I think about the flavor of butterscotch, which is sweet and buttery-rich, with complex flavor notes of nuts and caramel (at least to me, lol). That’s why I decided to brown the butter; so it would add a nutty dimension to the drink. Keto brown sugar adds caramel-like flavor notes (of course you can use regular brown sugar or coconut sugar if you prefer). And vanilla and butterscotch extracts give it just the right flavor. A teensy hint of fresh-grated nutmeg gives it an intoxicatingly alluring aroma. And just like that, bulletproof butterbeer was born, which is basically so wrong it’s right, lol. Harry Potter Butterbeer Latte Ingredients Butter Keto brown sugar Hot espresso (or strong coffee) Butterscotch extract Vanilla extract Freshly-grated nutmeg Whole milk Whipped cream Keto caramel Gold + white sprinkles   How to Make a Hot Butterbeer Latte Brown the butter. Blend the browned butter and all other ingredients together. If desired, top with whipped cream, caramel, and sprinkles.
